San Silvestro is located in the territory of the Commune of Novello. The grapes are mostly grown in the Langhe and from vineyards found in the Roero and the Monferrato regions. San Silvestro represents the continuation of a project begun by Giovanni Sartirano which has been passed down through four generations. Today it is run by cousins Paolo and Guido Sartirano and San Silvestro has gradually expanded beyond the local market and their wines can be found around the world.
On the hills near Gavi, not far from the Ligurian Sea, the Cortese grapes are grown, producing this Gavi D.O.C.G. The Cortese is a white grape variety grown in the Alessandria area, especially on the hillsides surrounding the town of Gavi. This variety is not very robust and requires good climatic conditions in order to ripen properly. In the Alessandria area, it has found the essential conditions to produce excellent results. The soils are rich in marls and fossils, providing a unique terroir for this unique wine.
The grapes were gently pressed prior to the fermentation, which took place in stainless steel tanks at a controlled temperature of 16 to 18°C and lasted 10 days. The wine was left to rest in tank on its fine lees for six months, which added texture and complexity, prior to being bottled.
This crisp white wine shows incredible mineral, zesty and floral notes, with a hint of spice and the typical hints of bitter almond that makes this wine unique. Prominent mineral characters linger on the long and precise finish. The perfect accompaniment to fish, sushi and oysters; poultry dishes with creamy sauces; and spicy cuisine.
