Made in the traditional method with a second fermentation in the bottles and 14 months of age on its fine lees. The juice is in contact with the skins for three hours to macerate and extract its beautiful pale pink hue. Lovely balance of varietal aromas such as raspberry, figs and delicate floral notes with fresh bread from the lees. Very fresh and light on the palate. Good balance between the acidity and the fruit concentration. With a smooth creamy mousse on the finish.

This superb provence rosé is made from a blend of old vines on clay and gravel soils, using techniques to ensure the highest quality by picking and destemming the grapes and using optical sorting technology to make sure each individual grape is the best. The juice is vinified in stainless steel to preserve the fresh fruits with bâtonnage’ (stirring) of the yeast lees to make a fresh and round wine.

Produced from organic fruit grown at the small estate, Grande Courtade (meaning `large sunny courtyard`) near Beziers in the Languedoc, this is a delicate salmon pink rosé made by the `saignée` method of bleeding the fermenting juice from the skins, to preserve the fruit flavours and aromas. It is dry with a perfumed bouquet of wild strawberry and cranberry on the palate and a refreshing and crisp acidity.
